Fresh Apple Cake


 I've been a bad blogger. AWOL. These last two weeks have been a bit crazy and something had to go. So blogging got shoved to the back burner until I got all of my school stuff under control. And all the other "stuff" too. Well maybe not all of it, but enough of it to be able to sit down and maybe think  about what's been going on in my kitchen. And to dust off my poor neglected camera.

 Thanks to my brother, I've been blessed with several baskets of "just a little bit less than perfect" honey crisp apples. With this wonderful bounty, I've been making applesauce, apple butter and this lovely little apple cake. This is another recipe from my mom, that she got many years ago from someone at church. (There are some really good cooks at our little church. Homecomings with dinner on the grounds are always an occasion to eat way too much good food!)  This cake has just the right combination of spices and will fill your kitchen with scents of apple and cinnamon goodness. The apples (and raisins if you choose to add them) make the cake incredibly moist. You could add a caramel glaze if you like, but I found that it didn't really need another thing. And if by chance you have any of this lovely cake left over, it's even better the next day.


Fresh Apple Cake

Ingredients:
3 cups apples, peeled cored and chopped (I chopped mine pretty small)
1/2 cup golden raisins (optional)
1 cup nuts, chopped
2 eggs, beaten
3/4 cup oil (I used canola)
1 cup brown sugar
1 cup granulated sugar
2 cups all purpose flour
1/4 tsp. ground cloves
1/4 tsp. ground nutmeg
1/2 tsp. ground cinnamon
1/2 tsp. salt
1 1/2 tsp. baking powder
1 tsp. vanilla extract

Directions:
  • Grease and flour tube or bundt pan. Preheat oven to 350 degrees Fahrenheit.
  • In a large bowl, whisk together the eggs and oil. 
  • Add sugars and vanilla and mix well.
  • Sift together flour, salt, spices and baking powder. Stir flour mixture into sugar mixture. 
  • Stir in apples, nuts and raisins. 
  • Put apple mixture into prepared pan and bake for 55 to 60 minutes. 
  • Cool for 5 minutes in pan and then invert onto wire rack to finish cooling.

  2. I love apple cake, especially now that the seasons are changing and apples are readily available at market - I make mine like yours except I throw in coconut and do a butterscotch glaze... and I always think it is best for breakfast! Relax... you are a teacher.. we have all been a bit MIA....

  9. So glad to see you back! Our cakes seem very similar...both full of yummy fruit and spices. As much as I love my figs...I think I would have been even happier to receive a shipment of honey crisp apples. Yum!

    Those church cookbooks are gems, aren't they? I have a bunch from the 60's and 70's...I prize them highly. I came from a small town and believe me, those women knew how to cook!!

  26. This looks delicious and just in time to add to my fall baking. Our neighbor brought us a basket of apples from his farm. He doesn't know what they are but I made some applesauce and it is very good. I think I'll make a cake next. I'm not sure where you are in Virginia but am guessing near Winchester. That's where we got the best apples every fall when living in D.C. While growing up in Virginia, we always went to Crumpackers Orchard for a variety of the regions good apples. I'll be back next month and will load up on local apples. Can't wait!

  34. This looks wonderful! We are just starting to get apples here in TX! Believe it or not, we do have some local orchards! Pink lady and golden delicious are picking right now! This looks lovely and moist - just right for an apple cake! Have a wonderful school year!

  40. I find it strange that I've never tried this absolutely delicious looking cake. I've never really like eating apples plain, but I love them cooked and baked into thing.

  47. I had an apple cake itch after reading this recipe. I made your cake and it's so good! Although mine didn't turn out as pretty as yours, because it fell apart when I turned the pan upside down:) I don't think I let it cool long enough...ooops, patience never was a virtue of mine:) Oh well, it still tasted fantastic!

  52. I have been looking to bake a cake with just apples...no carrots, no pears...and this recipe seems to be perfect! :) I can already taste the crunch of nuts amidst the texture of apples and the sweetness of raisins.
