I am not a bossy person by nature. I pretty much go with the flow- I'm a middle child for heaven's sake. But I'm going to tell you to do something. Now. Make these cookies. Make a cup of tea. Perch one of these puppies over your steaming hot tea for just a minute. Then take a bite, close your eyes and swoon over the gooey caramel apple deliciousness that is this cookie. I mean, it is fall. And what screams "Fall" more than caramel and apple cider?
This is another awesome recipe from Laura at The Cooking Photographer. (If you don't' know her blog, you really should make a visit- she has so many lovely recipes and photos!) All you'll need- in addition to what you probably already have in your pantry- is a bag of Kraft Caramels and a box of Alpine Instant Spiced Cider. (Yep, those little packets of powder that you mix with hot water.) These two magical ingredients take an ordinary sugar cookie base and transform it into this perfect tea-time treat.
Caramel Stuffed Apple Cider Cookies
Ingredients
1 cup softened butter
1 cup granulated sugar
1/2 teaspoon salt
1 box (7.4 oz) Alpine Spiced Apple Cider Instant Original Drink mix -not sugar free- all 10 packets (I found this in my grocery store near the hot chocolate mixes.)
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
3 cups all purpose flour
1 bag Kraft Caramels (14 oz)
Directions
- Preheat oven to 350° F. Line cookie sheets with parchment. (You really need the parchment!)
- In a small bowl whisk together flour, baking soda, baking powder and cinnamon.
- With your mixer (or an energetic spoon) cream together butter, sugar, salt and all 10 packages of apple cider drink mix powder, until light and fluffy.
- Beat in eggs, one at a time. Add vanilla and mix well.
- Gradually add flour mixture to butter/egg mixture. Mix until just combined.
- Refrigerate for about an hour. (If you're really impatient you don't have to do this, but it makes it so much easier to work with.)
- When you are ready to bake, unwrap your caramels.
- Scoop out cookie dough ball about the size of a walnut. (I used a rounded cookie scoop-full. My scoop holds about a Tablespoon.)
- Flatten the ball of dough slightly in the palm of your hand. Press the unwrapped caramel into the center of your dough and seal the dough around it, covering it completely. Place on parchment covered cookie sheets 2 inches apart.
- Bake 12-14 minutes, or until very lightly browned around the edges. Please don't over-bake! Once the cookies are done, slide the parchment off of the baking sheet right out onto the counter. Allow cookies to partially cool on the parchment. When cookies are cool enough to be firm but still slightly warm, carefully twist off of parchment and allow to finish cooling upside down (either on the parchment or on a rack.) If you forget about them and they cool too much and stick to your parchment, put them into the freezer for a few minutes and they'll pop right off.
- Yield: about 4 dozen, depending on how large you make your cookies (or how many caramels have been snitched out of your bag before you begin.) Store in an airtight container.

ReplyDelete@ SJ- Mine didn't last more than a day. :) After the cookies cool, they are best slightly warmed either in the microwave or over a steaming cup. I imagine that the second day this would still hold true.

ReplyDeleteI just made these. Everyone thinks they are probably the best cookies they ever had!! I used 9 packets of cider because my daughter drank 1 packet. I couldn't find the wrapped caramels only caramel apple wrappers, which are round flat sheets that are used to make caramel apples.I stacked 2 together and cut them. They were smaller than wrapped candies but I think it worked out better because they did not stick! They were not as gooey as the picture but they are really good! I baked about 2 dozen and made the other 2 dozen or so in a plastic bin on the parchment ready to bake for a friend.

They're amazing again today, but the insides I feel should be softer or more gooey. Should I have let them cook longer? Any suggestions?? Thanks again!!!!! :-)
ReplyDelete@Alanajill- I don't think that cooking longer would change the caramel, in fact it might make it harder. I'd just microwave the cookies for a few seconds to make them soft again. Or have them with a cup of tea. :) Glad you enjoyed them!

The parchment paper keeps the cookies from sticking. You could try Sil-Pat, non-stick foil or greasing your cookie sheet very well!

These just came out of my oven and they're almost perfect! My caramels were a bit on the hard side to start with so they didn't melt down to the degree I would have liked them to, I bought them in bulk at the grocery store...I'll try the kraft ones next time as I do recall them being a bit softer the last time I used them! A gorgeous tasty cookie that I know my family and friends will love! I also really love the idea of warming it over my tea cup like a stroop waffle! Thanks for sharing a great recipe :)

ReplyDeleteI did a variation on these and it turned out excellent! I'm in college, so it's hard to have extra baking supplied available. I cought a Betty Crocker sugar cookie mix and added the cider powder to that (as well as the egg and butter per package). I would suggest letting the dough chill, and then dropping by spoonful and filling with caramel. Out of the oven, we drizzled melted caramel and cinnamon over the cookies. Easy and delicious :)

ReplyDeleteI made these the other day and they were absolutely delicious - the smell of the apple cider was just everywhere (in a good way). My mom had sent me some of the Hershey's Pumpkin Spice Kisses, so I stuffed some of the cookies with them instead and they were great! I wanted to ask you, is there a way to prevent the stuffing from migrating straight to the bottom of the cookie during baking? Though delicious, mine were definitely more like 'apple cider cookies with melted caramel stuck to the bottom' than 'apple cider cookies stuffed with caramel' :)

ReplyDelete@ Meaghan- I only had one or two break through the bottom. My cookie sheets are insulated- perhaps that makes a difference? Just make sure to enclose the caramel completely. I bet the pumpkin spice filling was yummy!
Found this on Pinterest! Just made some...super delish! I used a silpat instead of parchment paper...could that be why some of my caramel traveled to the bottom? They were fully enclosed by cookie when I put them on there. Still yummy yummy :)
ReplyDeleteI'm gluten-intolerant, so I subbed out all-purpose flour for a gluten-free flour mix and added an extra half-teaspoon of vanilla, and it worked wonderfully. :D There's no weird texture or taste. This recipe is fantastic! A big hit with my family today! Thanks for posting this!

ReplyDeleteI've never tried them with the sugar free Alpine packets. It may depend on what kind of sweetener is in them as to whether they will work or not. If it's a sweetener that you can bake with, maybe. If you do try it, please let me know how they turn out!

ReplyDeleteSorry- I can't attest to the shelf life of these, as they've always managed to disappear within a day or two. Maybe make a trial batch and test them out each day to see how they're holding up? That's probably your best bet. Or perhaps see how freezing affects them, either before or after baking. :)

DeleteThese are delicious! I personally am not a fan of hard to chew caramel, so I think next time I might use caramel bits and mix them in like chocolate chips, which would also mean you get caramel and apple in every bite. They do taste amazing though!

ReplyDeleteI wish I could tell you for sure what happened, but I'm not sure myself. Maybe it had something to do with humidity? Perhaps adding a bit more flour would help. My dough was a little bit sticky, but not too hard to work with. I hope you can make them work. :)
DeleteHi, I'd love to make these but in my country we don't have cider powder. What could I use instead of it? As far as I'm aware, there are no apple products in powder form here (basically, all we have is apple sauce and apples). The nearest store the WalMart page could point me to was in Palestine, which is of little help for a Swedish dude. Do you think I could use No-Egg replacement powder and apple sauce instead of the eggs or something? What spices are in the cider powder? These look and sound completely amazing, I'd love to make them!
ReplyDeleteI don't have any of the apple cider mix here at home right now, but I'm pretty sure it is mainly spiced with cinnamon. I can't say for sure if the applesauce would work or not, but it would be interesting to try. I was thinking that maybe apple cider concentrate could be incorporated into the dough somehow. I've heard that you can make that by slowly simmering apple cider on a very low heat until it is thickened. Let me know!

ReplyDeleteI don't know what I did wrong...I cooked them at 350 (and I have a thermometer in my oven too) for 14 minutes...
The kraft caramels were at room temperature when I put them in the dough...
So sorry your caramels didn't cooperate. :( I've never had this problem before. Were your caramels the soft chewy kind? I've always used the Kraft ones that you can find in the grocery store, and have always had good luck with them. They harden back up after a few hours, but will soften up with a few seconds in the microwave. Susanne, in an earlier comment, mentioned that she used Werther's soft caramels and had good luck with them. You might want to try those next time. :)
DeleteI love these cookies, but as someone on a diet I had to wonder how they stack up when I'm counting calories. 131 calories a cookie with a slight bonus of 21% of your daily recommended amount of vitamin c. Not bad if you only have one, but honestly it's about standard for fresh baked cookies calories. It's too perfect for me to risk testing it with butter alternates. XD I guess I'm going to make them for sharing and just remind myself, I'm getting my vitamin c in with these.

ReplyDeletethese were good but next time I'm either hiding the caramels until baking time or using one less packet of cider mix! The cider ratio was a bit too strong - but then again all I got was 42 cookies because of a caramel shortage!!

ReplyDeleteMade these cookies tonight...easy to make and the flavor is good, but my only complaint is the caramels do not spread through the whole cookie. It melts but stays in the middle. I dont know if I would make them again.

ReplyDeletemade these a few days ago...they are reeallly good but got very hard after about 3-4 days sealed in a ziploc bag. when reheated, they get softer. even though i loved them i'd be nervous to bring them to a party since i wouldn't want to be responsible for someone losing a filling! i love chewy caramel but i wonder if there's any way to make these a little less chewy to bring them to a party...
ReplyDeleteThe caramels do get hard after they sit awhile, and need to be warmed up a bit. I've been thinking about trying them with a homemade caramel to see if it stays any softer than the store-bought ones.

DeleteI tried out the recipe and they turned out fantastic right out of the oven. I put them into a zip lock bag to keep them fresh, but the next morning I rushed down stairswith excitement to open the bag and have one. Unfortunately they ended up being so hard..? The caramel after cooling became harder than fresh out of the wrapper and the cookies were also pretty hard. I was imagining to bite into a soft chewy cookie. The only way i found to somewhat save the cookie is to microwave it making it warm again but it just was not the same as when I first made them. Is there anyway around this? Maybe I did something wrong? I followed the instructions on here to a T, except for the salt. I did not add any because the butter I used was already salted.
ReplyDeleteThe caramels do get hard. You might try reducing the baking time a bit to keep the cookies softer though. Vickie (comment below)used caramel kisses instead, and they stayed soft. :)

ReplyDeleteI just made these this afternoon with my little grandkids, ages 3 and 5; they had a lot of fun wrapping the caramels in the dough. One thing I did differently, though: I sprinkled grainy turbinado (sp?) sugar and a little bit of grainy Kosher salt on each one and pressed the grains into the top of the dough before baking. It made them have that sweet/salty caramelly flavor that I just love.

ReplyDeleteLike all the other foreigners, I'm asking for replacements... So: Do you know Turkish apple tea? Could that be used for these? It's not tea, really, and the pic in linked apple cider package looks pretty much the same stuff.
I'm not familiar with Turkish apple tea, but it looks like it is a granulated apple drink. The apple cider is a powder that has a concentrated sweet apple taste, with spices (cinnamon and cloves perhaps). You could try the apple tea and see how it does in the recipe. The apple cider mix just gives the cookie dough a spicy apple flavor. Good luck! :)
DeleteI love these cookies and have made them several times. We moved into a new house a few months ago and I made the cookies for the first time since we lived here. They came out horrible! They weren't burnt but the caramel leaked out all over the cookie sheet and the cookies got all deformed and half of the batch got all crumbled just trying to detach it from the parchment paper. Do you have any idea why this could have happened? Maybe the oven temp is off? I love these cookies and don't want to gI've up making them!
ReplyDeleteSince you've made them before with no problems, and everything else was the same, I'd go with the oven temperature being off- that could definitely cause problems with the cookies. I hope you figure it out! :)

ReplyDeleteI have been sugar free for a couple of years now, and after having these cookies once with sugar, I was determined to find a way to make them sugar free! I have used the sugar free apple cider drink mix and a half and half mix of stevia and xylitol. They are wonderful! We also recently mixed up an icing for them made with cream, butter, xylitol, stevia and cinnamon. They add a little bit of oomph that you lose when you can no longer use the caramels. This is my absolute favorite fall recipe, so I thank you!

ReplyDeleteI LOVE these cookies and have made them bunch of times and always have a few that leak out (no big deal) but tonight I made them and at least half of them leaked out! Any idea what I could have accidentally done differently? I used a little less than a Tablespoon of dough per cookie which is what I usually do...
ReplyDeleteI'm really not sure what might have happened. Perhaps your dough could have been warmer when the cookies went into the oven? Or maybe the caramels had a different melting point? It's really hard to say. I hope the next time you have better luck with them! :)

ReplyDeleteI was disappointed with these. Very strong apple cider flavor and the caramels are much less gooey when they cool. Next time I will use 1/4 of a caramel and half of the drink mix.
