Peach Confetti Salsa, and a Shake, Rattle and Roll!
An earthquake? Seriously? C'mon now, we're on the east coast! Thankfully, there was not much damage here- some broken china and ceramic chickies- but it was kinda scary while it was happening. Earthquake veterans might be rolling their eyes about now, but I'm new to this. The last significant earthquake in Virginia was back in 1897, before my time, so I haven't had any experience with this sort of thing. I sure hope everyone else is okay!
And this salsa? This salsa is definitely okay. It's made by my sister's recipe, with a rainbow of veggies and fruit from my brother's vegetable stand. The sweet peaches and spicy peppers blend together to make a mouthwatering combination, and make the perfect healthful dip for your chips. (This would also be wonderful on grilled chicken, or even on a hotdog!) I love a snack I can eat without feeling pangs of guilt and regret, don't you?
Peach Confetti Salsa- from my sister's recipe
2 sweet, ripe peaches, diced
1 Tablespoon lime juice
2 medium sized Roma tomatoes, diced (I used one red and one yellow)
1 jalapeno pepper, diced (very small dice)
1/4 cup sweet pepper, diced (I used a mixture of red and banana pepper.)
1 Tablespoon of sweet onion, diced (I used a little more than this.)
1 teaspoon diced basil (or cilantro if you prefer) (I used a little more of this, too)
2 teaspoons sugar (or to taste)
salt and pepper to taste (I use less salt than most people would, so I hesitate to put an amount.)
Mix all ingredients together in a non-reactive bowl. Taste for seasoning. If you like your salsa hotter, add a little more jalapeno. (This is a mildly spicy salsa the way it is written.) If you like your salsa sweeter, add more sugar. I found that the addition of the sugar brought out the flavor of the peaches more. If you have really ripe, sweet peaches you might not need as much. Let the salsa sit for at least an hour before serving, to give the flavors a chance to mingle. Store leftovers (if there are any) in the refrigerator.

Mmmm looks pretty good! I could sit and eat salsa and chips all day long with a cool beer. Nice touch using peaches.

ReplyDeleteEarthquake are not all that common here either, but I always say we will have ocean front property when the fault drops off...wink. It is an unsettling feeeling when it does happen.

ReplyDeleteI love this combination of peaches and tomatoes in a salsa! In case of earthquake- grab bowl of salsa and bag of chips before running out the front door;-)Living in earthquake country we have to make jokes about our shaking earth but I know it's scary!

This sounds delicious. I've made a similar version using mango and used as a side to roasted pork tenderloin. Great idea!

Betty, I was surprise about the earthquake on the East Coast, thinking that only here on the West that we had this issue.

I'm so glad you posted this! I love mango salsa but it can be a little hard to find mangoes at times where I live. I think I could even use canned peaches for this. I love this way of getting lots of fruits and veggies. I don't usually add salt at all to these kinds of things, it already has soo much flavor! Thanks, Betty!

THis sounds terrific. I make a mango salsa but love peaches. I don't know why I never thought of switching out the mangoes for the peaches, great idea!
ReplyDeleteAs for the earthquake my daughter is home for summer break but attends college in Boston and i know many of her friends felt it as well and now a hurricane. Be careful!
I should just get some of EVERYTHING when I visit your brother's stand, that way I'm prepared for your next blog entry. Passed over the yellow Romas yesterday. Shucks! But the peaches are out of this world just the way they are! With all of this earthquake excitement, I'm a bit out-of-it. Every time I hear a rumble, I think it's another after shock. Thankfully, no damage here that we can detect. Hope the house doesn't spring a leak at the foundation when Hurricane Irene's rains arrive.

ReplyDeleteOooh, I have everything to make this yummy sounding salsa!!! I'm glad the earthquake didn't cause any severe damage. We had one in Indiana a couple years ago and I thought it was my hubby bumping into the bed and disturbing my sleep :)
ReplyDeleteIt happens so rarely I'm sure it was very scary. I remember when I was in college I felt my bed shake while I was sleeping. I found out later it was an earthquake in Pennsylvania but we felt it in Wisconsin!

That was so crazy about the earthquake! And then the hurricane. Glad everyone/everything is ok. The Northeast is not used to this stuff! I love peach salsa and this looks sooo good. I can't wait to try it with the last peaches of the season :-)

Looks so fantastic' My friend canned me some peach salsa and it was wonderful but I am sure I would love the fresh one more. Glad the earthquake wasn't too bad. We are in earthquake zone here too. Scary!
